Position

We have a new and exciting opportunity for an experienced Head of Restaurants to lead the operational management of two distinctly unique yet equally prestigious venues: the Brasserie and Fine Dining Restaurant at Fulham Pier.

You will play a crucial role in maintaining the high standards and distinct identities of both restaurants. With your own brand of personality and flair, you will deliver a seamless service between kitchen and front of house, ensuring outstanding experiences for a clientele who expect only the best.

This role involves managing both restaurant teams effectively, maintaining operational efficiency, and developing innovative dining experiences. It requires close collaboration with the Executive Head Chef and other key departments for menu development and service excellence.

Job Summary

The Head of Restaurants will oversee the operations of both the Brasserie and Fine Dining Restaurant. The role focuses on ensuring high standards of service and quality, efficient management of restaurant teams, and delivering innovative dining experiences. Collaboration with the Executive Head Chef and maintaining cost control are essential to meet financial and operational goals while exceeding customer expectations.

Key Responsibilities

Operational Management

  • Work with the Executive Head Chef on menu development, ensuring offerings are on-trend and meet the high expectations of both casual and fine dining guests
  • Implement and oversee training programs for all service staff to ensure high standards of service and professionalism
  • Manage restaurant budgets, controlling costs while maximising profitability through effective pricing and inventory management
  • Ensure compliance with all health, safety, and food hygiene regulations
  • Monitor customer feedback and work proactively to resolve any issues, consistently aiming to exceed customer expectations
  • Collaborate with marketing and events teams to promote the restaurants and drive customer engagement
  • Ensure financial targets, including labour and food costs, are met or exceeded
  • Lead the service teams to ensure efficiency, high morale and professional development
  • Manage staff scheduling and operations, ensuring smooth daily service

Financial Management

  • Maintain cost control while ensuring profitability and high-quality service
  • Meet or exceed financial targets, with a focus on labour, food costs, and inventory management

The Ideal Candidate

  • Extensive experience managing restaurant operations in Michelin Star dining establishments
  • Exceptional leadership skills, with the ability to manage and motivate large, diverse teams
  • Expertise in delivering high-quality service that enhances the overall atmosphere of Fulham Pier, creating a remarkable experience for all guests
  • Strong creative skills with experience in identifying target audiences and catering to diverse tastes
  • Strong business relationship skills, with commercial acumen and evidence of successfully managing costs
  • Experience ensuring profit margins and meeting financial targets
  • Supervising Food Safety Level 2 qualification or equivalent
  • Strong team management and leadership skills, with the ability to motivate and develop your team
  • Flexibility to work 5 over 7 days

What We Offer
