Role

Fulham Pier is seeking a talented Back of House Manager to play a key role in delivering exceptional service and ensuring the smooth running of all kitchen operations. This is your chance to be part of a dynamic, fast-paced environment, handling up to 25,000 covers per event, including exciting football matches and high-profile events.

As Back of House Manager, you’ll be responsible for overseeing the efficiency of our kitchens while upholding the highest standards of cleanliness, safety, and organisation. You will ensure that all food preparation and kitchen areas are kept spotless, functional, and ready to cater for large-scale events, all while providing invaluable support to our culinary team.

What you’ll do:

  • Lead and oversee the cleaning and maintenance of all kitchen and food preparation areas, ensuring they meet health and safety standards.
  • Manage and maintain the stock of cleaning materials and chemicals required for the kitchen operation.
  • Coordinate with suppliers to ensure timely deliveries and monitor supplier performance using agreed KPIs.
  • Collaborate with the culinary team to manage food wastage and contribute to sustainable practices.
  • Ensure effective management of the team, including recruitment, training, and development.
  • Monitor labour costs to meet or exceed budgetary expectations.
  • Supervise the safe storage and use of kitchen machinery and cleaning equipment.
  • Support the onboarding and training of new recruits in line with company standards.
  • Organise and manage monthly procurement meetings with the Executive Sous Chef to ensure smooth operations.
  • Ensure compliance with all health and safety procedures, including COSHH, food handling, manual handling, and fire safety.
  • ⁠Manage internal stock transfers and ensure proper storage of commodities.
  • Effective communication and collaboration with both internal and external stakeholders.
  • Maintaining high standards of cleanliness and safety in all kitchen areas.
  • Monitoring and managing stock levels of cleaning materials and equipment.
  • Leading and developing the back of house team to deliver an efficient and compliant operation.

What you bring:

  • Previous experience in a similar role, preferably in a large-scale event or hospitality environment.
  • Strong organisational skills with a focus on cleanliness and safety.
  • Good communication skills and experience in managing teams.
  • IT literate with experience in managing inventory and procurement systems.
  • Intermediate Food Hygiene/Level 2 qualification required.
  • Proven experience in managing costs and budgets while maintaining service delivery standards.
  • Physically capable of handling manual tasks related to stock and equipment management.
